Note: This qualification has replaced the Foundation Certificate in Food Hygiene.

About the course

This qualification will benefit anyone working in a situation where food is prepared, cooked and served. It is relevant to all catering operations - for example, pubs, hotels, restaurants, travel, contract catering, fast-food outlets, in hospitals, care and nursing homes, schools, prisons and armed forces.

Who should attend?

All food handlers including chefs, cooks, kitchen porters, nursing home staff etc.

Learning Outcomes:
  • Firm grasp of the importance of food safety and knowledge of the systems, techniques and procedures involved
  • Understanding of how to control food safety risks (personal hygiene, food storage, cooking and handling)
  • Confidence and expertise to safely deliver quality food to customers
Course Content:

The qualification covers the following topics:

  • Legislation
  • Food safety hazards
  • Temperature control
  • Refrigeration, chilling and cold holding
  • Cooking, hot handling and reheating of foods
  • Food handling
  • Principles of safe food storage
  • Cleaning
  • Food premises and equipment
Course Duration:

There are six hours of teaching. Courses are usually conducted over one day, but can be split over two mornings/afternoons if required.

Assessment Method:

30 question multi-choice paper

Pass mark - 20 correct answers out of 30 questions.

None - Appropriate for all employees

Delivery Method:

By use of exercises, handouts and group work etc in an informal setting, either on your premises or in our training room. Each student receives a copy of the textbook and handouts. Our courses are conducted in English, but a range of foreign language papers and work books are available for candidates who would find it easier.

Course Evaluation:

At the end of the course, as part of our quality monitoring procedures and to contribute to the on-going development and improvement of the programme, all delegates will be asked to complete a course evaluation.
