About the course

Food safety regulations and best practice are constantly changing, and in order to guarantee safe food to consumers, food business supervisors must keep their knowledge up to date. This course is designed to remind candidates of their supervisory responsibilities towards food safety by:

  • refreshing candidates' knowledge of food safety
  • encouraging best practice within the workplace
Who should attend?

All candidates who have taken the C.I.E.H. Level 3 Award in Food Safety Supervision in Catering /for Manufacturing are recommended to complete a refresher course three years after completion.

Learning outcomes

Successful completion of this refresher qualification will enable candidates to understand:

  • how food business operators can ensure compliance with food safety legislation
  • the application and monitoring of good food safety practice
  • how to implement food safety management procedures
  • the role of supervision in food safety management procedures
Course Content:

The qualification covers the following topics:

  • Food safety legislation
  • Good food safety practice
  • Food safety management procedures
  • Training and communication

Eight hours training + two hours assessment

Assessment Method:

A 2-hour, 60 question multi-choice question paper

Pass mark - 40/60 questions, Credit pass 50/60.

Entry Requirements:

MUST have completed the Level 3 Award in Food Safety Supervision in Catering /for Manufacturing

Delivery Method:

Delivery option 1

Distance completion of workbook followed by two-hour discussion session

Delivery option 2

Eight hour training session

By use of exercises, handouts and group work etc in an informal setting, either on your premises or in our training room. Each student receives a copy of the textbook and handouts. Our courses are conducted in English, but a range of foreign language papers and work books are available for candidates who would find it easier.

Course Evaluation:

At the end of the course, as part of our quality monitoring procedures and to contribute to the on-going development and improvement of the programme, all delegates will be asked to complete a course evaluation.
